One of my favorite things on those nights with not a lot of time is either reheating a batch of nutritious nuggets (recipe is on this site--I make extra and freeze them)...they only take a few minutes to reheat in the toaster oven and I serve it with a big salad or lunchtime lentil soup (recipe on this site). Pick one or two of your favorite recipes and make extra each week (grilled chicken, roast beef or pork) and then turn the leftovers into a gourmet sandwich. Use a great bread and add some sun dried tomato pesto (in the Momalicious cookbook) and a yummy cheese like brie or Monterrey jack can get you a great dinner in minutes!
